Spicy Potato and Celeriac Soup
Celeriac is very popular in France, but in the English-speaking world it is generally unknown, overlooked and underused. This Spicy Potato and Celeriac Soup is a good way to familiarise yourself with the flavour. It’s deliciously warming, filling and easy to make, also (using a pressure cooker) it can be on the table in half an hour. For calorie counters, celeriac is brilliantly low – this recipe works out at about only 23 kCal /100 gram.

- Heat the oil, gently soften the onion then the garlic & leeks.
- Add the spices and cook, stirring, over a low heat for a couple of minutes.
- Meanwhile roughly chop the vegetables then add them to the pan and stir together.
- Add the stock, put on the lid and bring up to pressure.
- Cook for 10 minutes then turn off the heat and allow to cool by itself.
