Thinly slice the onion and garlic. Heat a Tbspful of olive oil a pan and gently sauté them over low heat.
Meanwhile drain & wipe the halloumi, then dice it into 2cm cubes. Heat a spoonful of oil in another, non-stick pan, add the chilli then the cheese cubes. Cook them until golden on each side, then transfer them to a plate lined with paper kitchen towel.
Add the tomatoes to the onion, and cook for 5 minutes, under cover. When the tomatoes have slightly softened, add the drained beans and season with salt and pepper. Stir for a minute, then add half of the spinach, lemon juice & zest. Put the lid on, and 2 minutes later add the rest of the spinach.
Cook for another couple of minutes, until the spinach has wilted. Season and mix well.
Serve with the fried halloumi on top.
