Spinach, beans and halloumi salad

If you want to create a quick and easy vegetarian and/or low-carb meal, try this super easy dish! This spinach, beans and halloumi salad is ready in ten minutes –  the halloumi is cooked separately, so you can serve the bean& spinach mixture without the cheese to those who don’t want or can’t have dairy. Serve it with toasted pita if carbs are not a problem for you.

Ingredients
  

  • 1 red onion
  • 1 clove of garlic
  • 300 g cherry tomatoes halved
  • 1 block halloumi
  • ½ tsp chilli flakes
  • 1 tin of beans drained
  • 1 lemon juiced and zested
  • 200 g spinach

Method
 

  1. Thinly slice the onion and garlic. Heat a Tbspful of olive oil a pan and gently sauté them over low heat.
  2. Meanwhile drain & wipe the halloumi, then dice it into 2cm cubes. Heat a spoonful of oil in another, non-stick pan, add the chilli then the cheese cubes. Cook them until golden on each side, then transfer them to a plate lined with paper kitchen towel.
  3. Add the tomatoes to the onion, and cook for 5 minutes, under cover. When the tomatoes have slightly softened, add the drained beans and season with salt and pepper. Stir for a minute, then add half of the spinach, lemon juice & zest. Put the lid on, and 2 minutes later add the rest of the spinach.
  4. Cook for another couple of minutes, until the spinach has wilted. Season and mix well.
  5. Serve with the fried halloumi on top.
