Spinach, beans and halloumi salad
If you want to create a quick and easy vegetarian and/or low-carb meal, try this super easy dish! This spinach, beans and halloumi salad is ready in ten minutes – the halloumi is cooked separately, so you can serve the bean& spinach mixture without the cheese to those who don’t want or can’t have dairy. Serve it with toasted pita if carbs are not a problem for you.

- Thinly slice the onion and garlic. Heat a Tbspful of olive oil a pan and gently sauté them over low heat.
- Meanwhile drain & wipe the halloumi, then dice it into 2cm cubes. Heat a spoonful of oil in another, non-stick pan, add the chilli then the cheese cubes. Cook them until golden on each side, then transfer them to a plate lined with paper kitchen towel.
- Add the tomatoes to the onion, and cook for 5 minutes, under cover. When the tomatoes have slightly softened, add the drained beans and season with salt and pepper. Stir for a minute, then add half of the spinach, lemon juice & zest. Put the lid on, and 2 minutes later add the rest of the spinach.
- Cook for another couple of minutes, until the spinach has wilted. Season and mix well.
- Serve with the fried halloumi on top.
