Sticky coca-cola ribs

These sticky coca-cola ribs are perfect for summer barbecues. You can pre-cook them in the cola, then glaze them and keep chilled until you’re ready to barbecue or grill them for your guests (which should only take about 10-15 minutes). You can also serve these ribs cold, so they are ideal for parties, picnics and trips.

Ingredients
  

  • 1 rack of baby pork rib
  • ½ litre coca-cola
  • For the sauce:
  • 3 Tbsp tomato ketchup
  • 2 Tbsp soft brown sugar
  • 1 Tbsp soy sauce
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp sweet chilli sauce
  • ½ tsp paprika

Method
 

  1. Heat oven to 160C. Put the rack of ribs in a small roasting tin. Pour over the cola and cover the tin with foil. Roast for about 1.5 hrs, until the ribs are tender, turning them once halfway through.
  2. Meanwhile, put all the sauce ingredients in a small saucepan and gently heat. Cook for about 5 minutes until you get a sticky glaze.
  3. When the ribs are done, discard the liquid, dry the rack with kitchen towel then brush with the glaze.
  4. Heat your BBQ, griddle pan or turn the grill on in your oven.
  5. Cook the ribs on each side until golden, sticky and crispy (basting regularly with the remaining sauce). This should take about 10-15 minutes.
