Sticky coca-cola ribs
These sticky coca-cola ribs are perfect for summer barbecues. You can pre-cook them in the cola, then glaze them and keep chilled until you’re ready to barbecue or grill them for your guests (which should only take about 10-15 minutes). You can also serve these ribs cold, so they are ideal for parties, picnics and trips.
Ingredients
Method
- Heat oven to 160C. Put the rack of ribs in a small roasting tin. Pour over the cola and cover the tin with foil. Roast for about 1.5 hrs, until the ribs are tender, turning them once halfway through.
- Meanwhile, put all the sauce ingredients in a small saucepan and gently heat. Cook for about 5 minutes until you get a sticky glaze.
- When the ribs are done, discard the liquid, dry the rack with kitchen towel then brush with the glaze.
- Heat your BBQ, griddle pan or turn the grill on in your oven.
- Cook the ribs on each side until golden, sticky and crispy (basting regularly with the remaining sauce). This should take about 10-15 minutes.
