Tuna and bean salad

It takes less than 10 minutes to throw together this tuna and bean salad! It’s also delicious and healthy! Perfect for picnics, parties or for lunch on a piece of wholesome toast. I used butter beans but cannellini, haricot or borlotti beans are just as good.

Ingredients
  

  • 1 red onion
  • ½ red pepper
  • 1 tin of butter beans
  • 1 small tin of tuna steak in water approx. 150g
  • 2 Tbsp olive oil
  • 1 Tbsp red wine vinegar
  • 1 Tbsp drained capers
  • 1 clove of garlic optional
  • 1 handful of flat parsley leaves chopped

Method
 

  1. Finely slice the red onion and chop the red pepper. Scatter them into a large mixing bowl.
  2. Drain the tuna and beans, add them to the chopped vegetables. Add the chopped parsley.
  3. Mix the oil and vinegar with the capers and garlic if used. Season with salt and pepper.
  4. Toss the salad with the dressing. Season more to your liking.
  5. Serve at room temperature.
