Rinse the rice well, until the water is clear around the grains.
Put the drained rice in a saucepan, add the raisins and cinnamon stick, then pour in the water. Bring to the boil, then over a low heat and under cover simmer for 45 minutes.
Meanwhile, dry-fry the pine nuts and set aside.
Heat the oil in a large pan, add the spices, salt and onion slices. Gently cook for about 10 minutes, until soft and golden brown.
Transfer the cooked rice to a large serving bowl (it should be nice and fluffy), and discard the cinnamon stick. Add the fried onions, toasted pine nuts, vinegar and herbs. Toss well.
Serve with labneh if you like.
