Turkish Pilaf

Pilaf orpilavis a rice dish cooked in broth with mixed spices and onion. The basic dish then often gets supplemented with meat, fish, various vegetables and dried fruits. This Turkish Pilaf recipe is a typical, traditional and simple version that can be served as a side dish with grilled/fried meat and fish. It’s very tasty and healthy, so perfect for vegans or on vegetarian days too!

Ingredients
  

  • 300 g short-grain brown rice
  • 1 cinnamon stick
  • 2 Tbsp raisins
  • 750 ml water
  • 2 Tbsp pine nuts
  • 3 Tbsp olive oil
  • 2 onions thinly sliced
  • ¼ teaspoon ground allspice
  • ½ tsp ground cumin
  • ½ tsp sea salt
  • 2 Tbsp red wine vinegar
  • A small handful of parsley chopped
  • A small handful of mint chopped

Method
 

  1. Rinse the rice well, until the water is clear around the grains.
  2. Put the drained rice in a saucepan, add the raisins and cinnamon stick, then pour in the water. Bring to the boil, then over a low heat and under cover simmer for 45 minutes.
  3. Meanwhile, dry-fry the pine nuts and set aside.
  4. Heat the oil in a large pan, add the spices, salt and onion slices. Gently cook for about 10 minutes, until soft and golden brown.
  5. Transfer the cooked rice to a large serving bowl (it should be nice and fluffy), and discard the cinnamon stick. Add the fried onions, toasted pine nuts, vinegar and herbs. Toss well.
  6. Serve with labneh if you like.
