Vegan and gluten-free apple crumble

If you’re after a vegan and gluten-free apple crumble recipe, try out this one! It’s easy to make, yummy and can be adjusted to your liking – for example you can add other dried fruits (figs, cherries, blueberries would work) or chopped nuts (such as almonds, walnuts, hazelnuts) if you like.

Ingredients
  

  • 3 green cooking apples
  • 1 Tbsp water or apple juice
  • Juice of ½ lemon
  • 1 tsp vanilla extract
  • 50 g unrefined cane sugar
  • 2 tsp cinnamon
  • ½ cup raisins
  • 50 g gluten-free flour
  • 50 g rolled oats
  • 50 g dairy-free margarine

Method
 

  1. Preheat the oven to 180°C.
  2. Peel and core the apples, then chop roughly into bite-sized chunks.
  3. Put the apple, water, lemon juice and half of the sugar in a saucepan. Bring to the boil and cook for 5 minutes until tender. Mix in half of the cinnamon, the raisins and vanilla.
  4. Transfer to an oven-proof dish.
  5. Rub the margarine with the flour and cinnamon until you get fine breadcrumb-like crumbles, then add the oats and the leftover sugar.
  6. Cover evenly the apple mixture with the oat crumble, slightly pressing the top with a spoon.
  7. Bake for 20-25 minutes until the top is golden and crispy.
  8. Serve it warm with dairy-free ice-cream, custard or yoghurt.
