Vegan Apple and cranberry sauce crumble

After Christmas and Thanksgiving don’t throw away your leftover home-made cranberry sauce - it can be used for cakes, muffins, puddings, pancakes, marinades and glazes. This vegan apple and cranberry sauce crumble is a perfect example. Use normal or gluten-free oats, according to your diet.

Ingredients
  

  • 3 Granny Smith apples
  • 1 cup home-made cranberry sauce
  • 4 Tbsp Rice flour
  • 3 Tbsp muscovado sugar
  • 1 cup porridge oats gluten-free, if needed
  • 1 tsp cinnamon
  • 4 Tbsp soft margarin or spread

Method
 

  1. Preheat the oven to 180°C.
  2. Core and slice the apples into 5mm thick slices.
  3. In a bowl, mix together the apple slices with the cranberry sauce.
  4. Arrange the fruit mixture in a baking dish, spreading it out evenly.
  5. In another bowl, combine the rice flour, sugar, brown sugar, cinnamon and oats. Add the cubed spread/margarine and work it into the mixture, using your fingers. When it resembles breadcrumbs, scatter it over the fruits, covering them completely and evenly.
  6. Put the dish in the oven and bake for 25 minutes, or until golden and the fruit is bubbling.
  7. Remove the dish from the oven and allow it to cool for 5 minutes.
  8. Serve warm with vegan custard, vanilla ice cream or yoghurt.
