Vegan Apple and cranberry sauce crumble
After Christmas and Thanksgiving don’t throw away your leftover home-made cranberry sauce – it can be used for cakes, muffins, puddings, pancakes, marinades and glazes. This vegan apple and cranberry sauce crumble is a perfect example. Use normal or gluten-free oats, according to your diet.

Method
- Preheat the oven to 180°C.
- Core and slice the apples into 5mm thick slices.
- In a bowl, mix together the apple slices with the cranberry sauce.
- Arrange the fruit mixture in a baking dish, spreading it out evenly.
- In another bowl, combine the rice flour, sugar, brown sugar, cinnamon and oats. Add the cubed spread/margarine and work it into the mixture, using your fingers. When it resembles breadcrumbs, scatter it over the fruits, covering them completely and evenly.
- Put the dish in the oven and bake for 25 minutes, or until golden and the fruit is bubbling.
- Remove the dish from the oven and allow it to cool for 5 minutes.
- Serve warm with vegan custard, vanilla ice cream or yoghurt.
