Spicy Tomato and Pepper Soup

This Spicy Tomato and Pepper Soup is just the thing for a cold evening – though I often also have it for brunch or lunch because it’s quick, easy and tasty – particularly with crusty fresh bread.

Ingredients
  

  • 2 Tbsp olive oil
  • 1 large red onion
  • 3 large red peppers capsicums
  • 2 cloves garlic
  • 1 fresh red chilli
  • 600 g ripe tomatoes
  • 1 tin tomatoes
  • 1 litre stock
  • To garnish: fresh basil

Method
 

  1. Deseed the peppers then roughly chop them and the other fresh ingredients.
  2. Heat the oil in the pan. Add the onion, peppers, garlic & chilli. Stir for a couple of minutes then add the fresh tomatoes.
  3. Continue to stir for another couple of minutes then mix in the tinned tomatoes and stock.
  4. Put on the lid, bring up to pressure and cook for 7 (high pressure) or 10 (medium pressure) minutes.
  5. Allow to cool by itself. Serve sprinkled with fresh basil and (if diet allows) soured cream.
