Spicy avocado and red pepper cream

I love guacamole so I like to experiment with different recipes. This Spicy avocado and roasted  pepper cream is one of my favourites.  It’s ready in just 5 minutes – you can use jarred roasted red pepper or your own  barbecued  or grilled leftovers. I used spicy chipotle paste, which is more powerful than the normal one! If you want it super hot, you can add some fresh chilli to it too – if you want a mild version, just use the normal chipotle paste sold in most shops.

Ingredients
  

  • 1 big or 2 small ripe avocado
  • 1 roasted pepper
  • 1 garlic minced
  • ½ red onion roughly chopped
  • Juice of 1 lime
  • 1 tsp spicy chipotle paste
  • 1 handful coriander leaves
  • Salt &pepper

Method
 

  1. Drain the roasted pepper and put it into a small food processor.
  2. Cut the avocado in half, remove the stone and scoop the flesh out into the food processor. Add the garlic and onion.
  3. Whizz for a few seconds. Add the lime juice and chipotle paste. Process for a few seconds. Add the coriander and whizz again, until you get a smooth, thick cream.
  4. Taste, season to your liking, and add more chipotle or lime if needed.
  5. Serve immediately.
