Background

This coconut rice is the most delicious straight rice dish I've ever tried. The rice is just simply cooked with coconut cream & ginger - and that's it. It has no sugar (as many other recipes do) so it's more healthy too. It complements South-East Asian dishes superbly.

Ingredients

2 cups jasmine rice
2 cups water
200ml coconut cream
2 cm piece ginger, peeled

Instructions

Wash the rice thoroughly with cold water, until the water runs clear.
Put the rice with the other ingredients in a saucepan, then bring to the boil, stirring once or twice.
When it boils, turn down the heat, put on the lid and, at low temperature, cook for another 10 minutes.
Turn off the heat, let it rest for 10 minutes with the lid on.
Discard the ginger before serving.
