Honey & Cinnamon Christmas biscuits

Background
These Honey & Cinnamon Christmas biscuits are popular in Middle-Europe during Advent. They are similar to English ginger biscuits (cookies) but a bit softer because of the honey. You can add some mixed spice to the dough if you'd like to spice them up a bit. They make excellent gifts and Christmas decorations too.
Ingredients
- 150g flour
- ½ tsp baking powder
- ½ tsp ground cinnamon
- 1 pinch ground cloves
- 50g soft butter or dairy-free margarine
- 50g soft brown sugar
- 1 egg
- 2 Tbsp honey
Instructions
- Preheat the oven to 170°C.
- Mix the egg with the honey.
- In a large bowl, mix the flour, baking powder, cinnamon and cloves.
- Cream the butter with the sugar, then add it to the flour. Combine well into a dough.
- Roll the dough out on a floured surface to 5mm thickness, then stamp out Christmas shapes.
- Place the biscuits on a non-stick or lined baking tray, then insert a hole with a straw in each at the point you want to hang them from.
- Bake for about 15 minutes until cooked through and golden.
- Leave them to cool completely on a wire rack, then decorate them to your liking.
