Background

These Honey & Cinnamon Christmas biscuits are popular in Middle-Europe during Advent. They are similar to English ginger biscuits (cookies) but a bit softer because of the honey. You can add some mixed spice to the dough if you'd like to spice them up a bit. They make excellent gifts and Christmas decorations too.

Ingredients

150g flour
½ tsp baking powder
½ tsp ground cinnamon
1 pinch ground cloves
50g soft butter or dairy-free margarine
50g soft brown sugar
1 egg
2 Tbsp honey

Instructions

Preheat the oven to 170°C.
Mix the egg with the honey.
In a large bowl, mix the flour, baking powder, cinnamon and cloves.
Cream the butter with the sugar, then add it to the flour. Combine well into a dough.
Roll the dough out on a floured surface to 5mm thickness, then stamp out Christmas shapes.
Place the biscuits on a non-stick or lined baking tray, then insert a hole with a straw in each at the point you want to hang them from.
Bake for about 15 minutes until cooked through and golden.
Leave them to cool completely on a wire rack, then decorate them to your liking.
