Background

At the end of the day at my local market they were almost giving away lovely lettuces. Having eaten enough salads recently to grow ears like Bugs Bunny, I thought I'd give this Lettuce and Pea Soup a go. It turned out to be remarkably satisfying, tasty and healthy!

Ingredients

3 Tbsp olive oil
2 medium onions
4 garlic cloves
400g lettuce
450g frozen peas
1½ litre vegetable stock
Handful fresh mint leaves
½ tsp sugar
Seasoning

Instructions

Heat the oil in a large pan over a medium heat. Peal and slice the onions and garlic, then stir for a couple of minutes in the oil to soften.
Meanwhile, roughly chop up the lettuce and wash thoroughly before adding to the pan.
When the lettuce has wilted a bit, add the other ingredients and season to taste.
Bring to the boil, then simmer for about 10 minutes, stirring occasionally.
Serve with fresh, chunky bread.

Tips

Try serving it with a dollop of yoghurt.
