Background

Much though I love making bread by hand a bread machine can't be beaten for convenience - particularly if you like fresh bread in the morning but don't fancy getting up at 4:00 a.m. to bake it! You still control all the ingredients and can adjust them to suit any allergies or sensitivities in the family. This Olive Bread is a favourite of ours - the breakfast time aroma is just wonderful!

Ingredients

¾ tsp Yeast (fast action dried)
400g Strong flour
1 tsp Sugar
1 tsp salt
3 Tbsp Olive oil
1 Tbsp dried Oregano (or Herbes de Provence)
270 ml Water
Auto Dispenser: 70-80g Black Olives (whole pitted)

Instructions

Add all the ingredients, except the olives, to the bowl of the bread machine.
Select the programme appropriate to your machine for medium whole wheat raisin - about 5 hours. Use the delay timer if you want it for breakfast.
Add the olives to the automatic dispenser. If your machine doesn't have one, add them when the add ingredients beeper sounds - normally about 75 minutes into the cycle.

Tips

You can use 50% Canadian Strong Wholemeal and 50% White flour or other combinations to get your preferred texture.
Use milk (or dairy free almond milk) instead of water for a richer loaf.
You can mix in other olives for more colour.
