Thai prawns with spicy dip
Background
These spicy prawns are fantastic for parties as nibbles or as a starter in a dinner menu. It can be prepared well in advance, the grilling only takes a couple of minutes. It's best served warm or at room temperature.
Ingredients
- 25 uncooked prawns (shelled)
- 1 Tbsp olive oil
- 3 spring onions (white part only)
- 1 red chilli (pre- soaked)
- 15g coriander leaves
- 15g mint leaves
- For the dip:
- 3 cloves garlic (chopped)
- 2 large chillis (seeded and chopped)
- 1 shallot (chopped)
- 1 tsp ginger (chopped)
- 3 Tbsp Thai fish sauce
- 3 Tbsp sugar
- 3 Tbsp coriander (chopped )
- 6 Tbsp lime juice (fresh)
- Ground pepper
Instructions
- Roughly chop the dip ingredients and put the chilli, garlic, lemon grass & ginger in a mini food processor. Blend into a textured paste then add the remaining ingredients. Toss well.
- In a separate bowl mix the washed prawns with 100 ml of the dip. Marinate for 15-20 minutes.
- Pour the remaining sauce into a serving dish. Set aside.
- Heat the oil in a grill/griddle pan. Remove the prawns from the marinade then fry on both side for about 2 minutes, until they turn pink.
- In the meantime: finely slice the spring onions and chop the herbs & chilli.
- Tip the cooked prawns in to a serving bowl, add the spring onion, coriander, chillii and mint.
- Serve with dip.
