Background
I love having soup in the summer - on very hot days I find some chilled soup very cooling and refreshing, whilst on breezy days it’s so lovely to snuggle up with a mug of hot & uplifting soup! My absolute favourite summer soup is Green pea soup because most versions can be served cold or hot and they make you feel wonderfully refreshed! This zesty pea soup is made with mint, dill and lemon - so it’s zingy, cooling and energising! You can some chilli to it too, if you want it to have a kick. It’s absolutely delicious and, most importantly, ready in just 15 minutes!
Ingredients
- 1 Tbsp olive oil
- 1 large onion
- 1 garlic clove, minced
- 500g peas (fresh or frozen)
- 500 ml vegetable or chicken stock
- 1 small handful of mint leaves
- 1 small handful dill
- 1 lemon, zest and juice
- Chilli flakes to serve (optional)
Instructions
- Finely chop the onion. Heat the oil in a sauce pan, and gently sweat the onion and garlic over a low heat for about 8-10 minutes, stirring regularly.
- Add the peas and stock to the pan, bring to the boil, then gently simmer for 5 minutes.
- Turn the heat off, add the mint and dill, then blend using a hand-held blender or liquidiser. When it’s smooth and velvety, stir in the lemon zest and squeeze in some lemon juice to your liking.
- Serve warm or cold.
