Classic potato salad
This classic potato salad is very popular in Middle and Eastern Europe. It’s normally served cold at parties, picnics and events. This is the basic recipe – normally we add fresh herbs or blanched veggies to it too, such as peas, green beans, spinach and so on. Sometimes we combine the mayo with sour cream,; other times we add a spoonful of mustard to the dressing. Feel free to modify it to your liking or to the occasion!

- Cook the potatoes with skin on, drain and let them cool.
- Peel the potatoes and cut them into bite sized pieces.
- Finely chop the onion, and thinly slice the celery (if used).
- In a large bowl, mix the chopped vegetables with the potatoes, vinegar and mayonnaise. Season with salt and pepper. Add some chopped fresh green herbs of your choice, if you like.
