Classic potato salad

This classic potato salad is very popular in Middle and Eastern Europe. It’s normally served cold at parties, picnics and events. This is the basic recipe – normally we add fresh herbs or blanched veggies to it too, such as peas, green beans, spinach and so on.  Sometimes we combine the mayo with sour cream,; other times we add a spoonful of mustard to the dressing. Feel free to modify it to your liking or to the occasion!

Ingredients
  

  • 500 g waxy potatoes
  • 1 small onion or 1 shallot onion
  • 1 tbsp white vine or cider vinegar
  • 3 tbsp mayonnaise
  • 1 stick of celery optional
  • Salt & pepper

Method
 

  1. Cook the potatoes with skin on, drain and let them cool.
  2. Peel the potatoes and cut them into bite sized pieces.
  3. Finely chop the onion, and thinly slice the celery (if used).
  4. In a large bowl, mix the chopped vegetables with the potatoes, vinegar and mayonnaise. Season with salt and pepper. Add some chopped fresh green herbs of your choice, if you like.
