Omelette with sardines and tomatoes

This omelette with sardines and tomatoes is a high-protein meal, rich in calcium and Omega 3 too. You can add some cheese if you want or if dairy is not an issue for you. Serve it with sourdough or chickpea flatbread.

Ingredients
  

  • 2 large or 3 medium eggs
  • 3 spring onions
  • 1 handful cherry tomatoes
  • 1 Tbsp olive oil
  • 4 sardines in spring water
  • Salt & pepper
  • 2 Tbsp grated cheese optional
  • 1 Tbsp chopped parsley leaves

Method
 

  1. Gently whisk the eggs in a bowl.
  2. Finely chop the spring onions and halve the tomatoes.
  3. Heat the oil in a frying pan.
  4. Add the spring onion and tomatoes and fry for 2-3 minutes, until softened.
  5. Pour in the egg mixture, let it spread out evenly, then add the drained sardines.
  6. Scatter the grated cheese on top, if used.
  7. Put a lid on, and after a minute turn down the heat and gently cook for about 5-8 minutes until the egg has set.
  8. Scatter the parsley all over the omelette then serve immediately.
