Minty pea fritters
These minty pea fritters are perfect for parties, picnics or just as little nibbles with a glass of wine. It only takes a few minutes to make them – and they are utterly delicious. Serve them with dips, or topped with salami, spreads or prosciutto & sundried tomatoes (this combo is absolutely divine!). This recipe is gluten-free, using gram flour, but you can also use other gluten-free flours or even wheat flour if your diet allows!

- Put the peas in a large bowl and pour boiling water over them. Leave for 3-5 minutes, then drain.
- Put all ingredients in a blender, season to taste, then process for a few second until you get a coarse paste – it should be like a spread but if it’s too thick, add more yoghurt.
- Heat a heavy based frying pan or pancake pan and add a drop of oil. Spread it around using a paper kitchen-towel. When hot, drop in a tablespoonful of the mixture, then gently spread around with the back of the spoon to form a round shape. Repeat this – you can probably cook 5-6 fritters at a time.
- After a couple of minutes, flip the fritters over with a spatula and cook for another minute or so, until golden.
- Transfer them to a plate and cook more fritters in batches using up all the batter.
