Ham, cheese and pepper omelette

Ham and cheese omelette is a classic combo but I find it a bit boring, so I normally add something else to it – like mushroom, fresh herbs, onion, roasted veggies and so on. Also, I like to use nutty, mature cheeses. This time I made this ham, cheese and pepper omelette, which I served with a crispy salad and wholesome bread on the side.

Ingredients
  

  • 1 red or yellow pepper
  • 4 large eggs
  • ⅓ cup grated nutty cheese such as Cheddar, Emmental
  • 2 pieces of good quality roasted/dry cured ham
  • 1 Tbsp chopped parsley
  • Salt and pepper
  • 2 Tbsp olive oil

Method
 

  1. Cut the pepper into thin slices.
  2. Heat the oil in a frying pan. Add the pepper and gently sauté for 5 minutes until slightly softened.
  3. Meanwhile, whisk the eggs in a bowl with a couple of pinches of salt.
  4. Cut the ham into small pieces.
  5. When the pepper has softened pour over the egg mixture, let it spread out then scatter the ham over it. Using a spatula arrange the ham and pepper bits evenly.
  6. Turn the heat down and put the lid on. Steam for 3-4 minutes until the egg is about to set on the surface. Scatter the grated cheese, put the lid on for another minute or so until the cheese starts melting.
  7. Now sprinkle the parsley on top, season with pepper and carefully fold the omelette in half. Cook for another minute for the cheese to melt completely, then slide it onto a plate and cut it in half. Serve immediately.
