Apple and cranberry oat cookies

These vegan apple and cranberries oat cookies are perfect for breakfast, mid-morning snack or with afternoon tea. They have no sugar, no flour, no eggs, no dairy – yet really nice and moist (and sweet enough!) You can make them with gluten-free oats too.

Ingredients
  

  • 2 ripe bananas
  • 1 green apple grated
  • 1 cup oats gluten-free if needed
  • 1 tsp ground cinnamon
  • 1 tsp vanilla paste
  • 2 Tbsp chopped walnuts or other nut & seeds
  • 1 Tbsp oil
  • 2 Tbsp dried cranberries

Method
 

  1. Mash the bananas with a fork or blend them in a blender.
  2. Add the oats, cinnamon, vanilla and grated apple, then mix well.
  3. Let the mixture rest for a few minutes. Meanwhile, set the oven to 180°C and line a baking tray with parchment paper.
  4. Add the cranberries and chopped nuts to the oat mixture and combine gently. If it’s too thick, add some apple juice or plant-based milk.
  5. Using your hands, make equal sized balls, then press them between your palms. Place them on the prepared baking tray.
  6. Bake in the oven for approx. 15 minutes until golden.
  7. Serve the cookies at room temperature.
