Apple and oat pancakes

These apple and oat pancakes are dairy-free and can easily be gluten-free if appropriate oats are used. They are ready in just 15 minutes, perfect for breakfast, brunch or snacks.

Ingredients
  

  • 1 apple peeled and grated
  • 1 cup oats gluten-free, if needed
  • 1 large egg
  • ½ cup ground almond
  • 1 cup oat milk
  • ½ tsp cinnamon
  • 1 tsp baking powder
  • 2 Tbsp coconut sugar

Method
 

  1. Put all ingredients in a blender and pulse until you get a thick, textured batter. Add more oat milk if it’s too thick.
  2. If you have time, rest the batter for 15-30 minutes.
  3. Oil a pancake pan or a heavy-based frying pan, then drop spoonfuls of batter into the pan, creating round shapes (5-6 cm). Cook for about 2 minutes on each side until golden, then transfer them to a plate. Repeat with the remaining batter.
  4. Serve warm or at room temperature.
