Asian-style tofu salad

This Asian-style tofu salad is super-healthy, easy to make and rather delicious! It’s perfect for lunch or a light supper – you can supplement or substitute the vegetables with shredded carrot, radish or Edamame beans; or blanched green beans, sugar snap peas, mangetout and so on.

Ingredients
  

  • 1 pack hard tofu approx. 200g
  • 1 small bag of mixed salad for two
  • ½ cucumber
  • ½ green bell pepper
  • 4 spring onions
  • 1 tsp toasted sesame seeds
  • For the dressing:
  • 2 Tbsp groundnut oil
  • 1 Tbsp rice vinegar
  • 1 tsp honey
  • 1 tsp naturally fermented soy sauce
  • ½ tsp toasted sesame oil
  • ½ tsp minced fresh ginger

Method
 

  1. Make the dressing – whisk the ingredients and set aside.
  2. Rinse and pat-dry the tofu then cut into 2cm cubes.
  3. Mix the tofu cubes with one Tbsp of the dressing, marinate for a few minutes.
  4. Meanwhile, chop the green pepper, cucumber and salad onions then toss with the salad leaves in a large serving bowl.
  5. Heat a drop of oil in a frying pan. Add the tofu with the marinade and fry for about 10 minutes until golden on each side.
  6. Add the tofu to the salad, then pour over the dressing and toss.
  7. Scatter the sesame seeds on top and serve.
