Bacon-wrapped butternut squash
This bacon-wrapped butternut squash is not only delicious but very versatile too. You can serve it as a main dish with a mash, or as a side dish with a Sunday roast. Alternatively cut the squash into bite-size pieces and serve them as nibbles at parties or as an appetizer at a dinner party.

Method
- Preheat the oven to 180°C.
- Cut the squash in half lengthwise, remove the seeds then cut them into wedges.
- Wrap the wedges with 2 or 3 slices of bacon. Season with a little pepper and brush with some oil.
- Place them in a roasting tray and bake for about 20 minutes.
- When the bacon is brown and the squash is soft, take them out of the oven.
- Serve hot.
- Party version: cut the squash into bite sizes, season them with pepper and paprika or chilli powder. Cut streaky bacon slices in half and wrap these around the bites. Serve them with aperitifs.
