Badusha is an Indian sweet dessert which is prepared mainly with all purpose flour, deep fried in ghee and soaked in sugar syrup.

Ingredients
  

  • For dough:
  • cup All purpose flour
  • ½ tsp Sugar
  • ½ tsp Baking powder
  • Water as required
  • ¼ cup Ghee
  • ¼ cup Yogurt
  • Ghee for deep frying
  • For sugar syrup:
  • 1 cup sugar
  • ½ cup water
  • Pinch of saffron
  • ¼ tsp Cardamom powder

Method
 

  1. In a pan, add sugar and water to make the sugar syrup. Let it boil and form One string consistency. Add saffron and cardamom powder to it and set aside.
  2. In a mixing bowl, add all purpose flour, sugar and baking powder.
  3. Add ¼ cup ghee to the mixture and mix well. The mixture will be crumbly.
  4. Then add the yogurt and mix well.
  5. Now add approximately ¼ cup water to the mixture and let it rest for 15 minutes. Do not knead the dough at this point.
  6. Knead the dough gently and make sure it is not too soft or runny.
  7. Take a small portion of the dough and roll it into a small ball with your hands.
  8. Take the dough ball and flatten it on your palm. Make sure to maintain some thickness.
  9. Make a small dent at the center of the ball. Keep aside. Do the same with remaining dough.
  10. Take a deep bottomed pan and add the ghee for deep frying. Heat the ghee.
  11. Fry all the dough portions on medium heat until they turn golden brown.
  12. Drop them into sugar syrup immediately and coat them with syrup on both sides. Soak for 5 minutes.
  13. Take them out of sugar syrup and optionally garnish them with cashews or coarsely pound almonds.
