Baked mushroom with butterbeans

This zingy, baked mushrooms with butterbeans can be served as a vegan main dish (for example on a piece of toast or with mashed potatoes); or a side dish with grilled meat/fish. It’s really easy to make and super healthy too.

Ingredients
  

  • 200 g baby button or chestnut mushroom
  • 1 lemon juiced
  • 2 Tbsp olive oil
  • 2 cloves of garlic minced
  • 4 sprigs of Thyme
  • ½ tsp chilli flakes optional
  • 1 tin butter beans drained
  • 2 Tbsp chopped parsley

Method
 

  1. Preheat the oven to 180°C.
  2. Scatter the mushrooms into a baking dish, add the thyme leaves and garlic, then drizzle with the oil and lemon juice. Season to taste, and combine well.
  3. Bake in the oven for about 15-20 minutes until the mushrooms have softened and golden.
  4. Mix in the beans and put it back in the oven for 5 minutes to warm through.
  5. Serve warm, garnished with the chopped parsley.
