Barbecued Harissa squid

For summer BBQ parties I highly recommend this super easy barbecued Harissa squid. It takes only 5 minutes to cook (which can also be done in a griddle-pan). Serve it with a crispy green salad in flat bread or with couscous.

Ingredients
  

  • 4-6 raw squid
  • Juice and zest of 1 lemon
  • 2 Tbsp harissa paste
  • ½ Tbsp sundried tomato purée
  • 1 garlic minced
  • 1 tsp olive oil
  • 1 Tbsp. chopped mint or parsley
  • ½ tsp salt
  • ¼ tsp ground pepper

Method
 

  1. Remove the tentacles and slice the squid into 1 inch thick rings.
  2. Mix the remaining ingredients in a bowl. Add the squid and marinate up to 2 hours.
  3. Heat the BBQ or griddle pan.
  4. Thread the squid rings onto metallic skewers and cook for approx 5minutes until charred,turning regularly.
  5. The tentacles you can pan-fry, griddle or grill.
  6. Serve warm, garnished with mint leaves.
