Beef and orange stir-fry

This beef and orange stir-fry can easily be prepared ahead; the cooking takes just 10 minutes – so it’s a perfect dish for a midweek supper or for part of a Chinese menu when you have friends over. Serve it with rice and stir-fried vegetables.

Ingredients
  

  • 500 g sirloin steak
  • 3 Tbsp groundnut oil
  • 3 medium onions thinly sliced
  • 3 Tbsp chopped garlic
  • 2 tsp orange zest
  • 2 Tbsp Chinese rice wine
  • 1 tsp cane sugar
  • 2 Tbsp Oyster sauce
  • For the marinade:
  • 2 tsp light soy sauce
  • 2 tsp Chinese rice wine
  • 2 tsp sesame oil
  • 2 tsp corn starch

Method
 

  1. Mix together the marinade ingredients.
  2. Cut the steak into 3cm wide slices and place them in a bowl. Add the marinade, mix well and leave for 15-20 minutes.
  3. Heat the wok. When piping hot, add 2 tablespoon of oil and wait until the oil is smoking a little – then add the beef and stir-fry for 2 minutes.
  4. Remove the beef, wipe the wok and heat it again. When hot, add the remaining oil, heat to smoking point.
  5. Add the onion, garlic and orange zest and stir-fry for a minute. Add the rice wine, sugar, then stir for 3 minutes. Put the steak back, add the oyster sauce and warm through.
  6. Serve immediately.
