Berry croissant bake

When you have stale croissants, don’t throw them away! You can use them for lovely croffle sandwiches or French toasts for breakfast, or easy & yummy desserts like this berry croissant bake. I used ready-made Madagascar custard, but feel free to make your own custard for the recipe. As to the berries – blueberries, cherries and raspberries would work too.

Ingredients
  

  • 1 large or 2 small stale croissant
  • 1 handful blackberry
  • 1 handful strawberry
  • 2 Tbsp ground almond
  • Grated zest of ½ lemon
  • 1 cup ready-made custard approx.

Method
 

  1. Preheat the oven to 180°C.
  2. Cut the croissants into small chunks and scatter them into a small but quite deep baking dish.
  3. Arrange the berries between them, then scatter the ground almond and lemon zest on top.
  4. Pour over the custard, enough to cover the croissant pieces completely.
  5. Let it rest for 5-10 minutes, or until the oven reaches the required temperature.
  6. Bake for about 20 minutes, until golden.
  7. It can be served warm, at room temperature or cold.
