Broccoli, Leek and Celeriac Soup

This soup is recommended for 5:2 and low-cal diets followers, as it’s satisfying and tasty, yet wonderfully low in calories! As made here, using a pressure cooker, this Broccoli Leek and Celeriac Soup works out at only about 65 kCal per portion.

Ingredients
  

  • 10 squirts oil spray 10 kCal
  • 2 cloves Garlic 9 kCal
  • 250 g Leeks 55 kCal
  • 320 g Broccoli 106 kCal
  • 220 g Carrots 66 kCal
  • 800 g Celeriac 143 kCal
  • 1 litre Vegetable Stock 40 kCal
  • Seasoning to taste
  • Garnish: Fresh herbs of your choice

Method
 

  1. Finely chop the garlic. Clean, trim and roughly chop the leeks, broccoli & carrots. Peel the celeriac and roughly chop.
  2. Heat the oil in the cooker over a medium heat then add the garlic. Stir to soften then lower the heat, add the leeks and sauté for a couple of minutes.
  3. Put in the remaining vegetables and allow to sweat for 5 minutes, stirring occasionally.
  4. Add the stock, bring to the boil then cook under pressure for 8-10 minutes. Cool under running water.
  5. Use a hand held blender to mix to a smooth consistency. Simmer and stir in the open pan for another 5 minutes adding a little more stock if you prefer a thinner soup.
  6. Scatter some fresh herbs over each portion.
