Cauliflower dhal

Dhal or dal/dahl is a staple dish India –  no wonder as it’s super easy to make, healthy, vegan and delicious. This cauliflower dhal is a delicate version, it’s mild, but do add some chilli powder for a spicy version. Serve it with basmati rice or naan bread on the side and some mango chutney.

Ingredients
  

  • 1 onion
  • 2 garlic cloves
  • 2 cm ginger
  • 1 small cauliflower
  • 1 carrot
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • ½ tsp turmeric
  • 5 curry leaves
  • 2 tsp Garam masala
  • 1 star anise
  • 1 handful baby tomatoes
  • 1 cup red lentils
  • Water
  • Salt and pepper

Method
 

  1. Finely chop the onion, garlic, carrot and ginger.
  2. Roughly chop the cauliflower.
  3. Heat the oil in frying pan and gently sauté the onion for 5 minutes, then add the garlic, turmeric and garlic. Stir for another 2 minutes. Add the mustard seeds, cumin seeds, coriander seeds, turmeric, garam masala, curry leaves, star anise and stir for a minute. Add the tomatoes, carrot and cauliflower pieces, then season with salt & pepper.
  4. Rinse the lentils, then add them to the pot.
  5. Pour over enough water to cover everything well, then bring to the boil.
  6. Gently simmer for 20 minutes under cover, until the cauliflower and lentils are tender.
  7. Serve with a dash of lemon juice and some chopped coriander leaves.
