Celeriac and Mushroom Soup

If you need a quick and easy low calorie meal (only 50 kCal per portion) that’s still tasty and remarkably filling, then this Celeriac and Mushroom Soup recipe is what you should try! I used the pressure cooker here but you can use a normal heavy based pan if you prefer – just simmer for about 25 minutes, remembering to stir frequently.

Ingredients
  

  • 8 squirts oil spray 8 kCal
  • 200 g Onions 70 kCal
  • 1 Garlic clove 4 kCal
  • 270 g Mushrooms 35 kCal
  • 720 g Celeriac 130 kCal
  • 1 Litre Vegetable stock 40 kCal

Method
 

  1. Peel and chop the onion. Peel and roughly chop the celeriac. Clean and roughly chop the mushrooms.
  2. Squirt the oil into the pan over a medium heat. Add the onions and stir until softened.
  3. Put in the mushrooms, allow them to release their juices, then add the celeriac and stir well.
  4. Pour in the stock and bring to the boil, stirring a couple of times.
  5. Put on the lid and cook under pressure for 10 minutes. Cool with running water.
  6. Use a hand held blender to create a smooth potage. If not watching the calories it’s delicious with crusty fresh bread!
