Chickpea mash with garlic

When you make a roast dinner – take the opportunity while the oven’s hot anyway to wrap a bulb of garlic (unpeeled) in some foil, then bake it for 30 minutes or so. The roasted garlic can then be used for many interesting dishes over the next few days. This chickpea mash with roast garlic is an example of this – a simple side dish that goes superbly with grilled or roasted meat &  fish, particularly with Middle-Eastern style dishes. It’s super healthy too!
