Christmas mince pie cookies

Homemade mincemeat is really useful for many Christmas treats. For example these Christmas mince pie cookies are ready within 15 minutes, if you’re using ready rolled shortcrust pastry  (or your own pastry, which can be made well ahead and stored in the fridge or freezer). This is a vegan recipe but you can use butter if dairy is not an issue for you.  (See more recipes with mincemeat here>>)

  6. Using Xmas cookie cutters, cut out pairs of different shapes – stars, bells, trees, moons, ginger men etc
  7. Put half of the pairs on a baking tray, lined with parchment paper.
  8. Spoon some mincemeat on top of each base, then press the other pair on top, sealing the sides (first dampen the edges with water or egg yolk)
  9. Bake in the oven for about 12 minutes, until light brown.
  10. Let them cool, then dust with icing sugar and serve.
