Cider braised red cabbage and apple

This cider braised red cabbage and apple looks and smells lovely on a festive dining table! It goes well with roasted poultry ( turkey, duck, goose, chicken) or roasted pork, ham and most games. Perfect side dish during the winter festivities!

Ingredients
  

  • 1 large Bramley apple
  • 1 medium red cabbage
  • 2 onions
  • 100 ml apple cider
  • 1 Tbsp cider vinegar
  • 50 g muscovado sugar
  • 1 pinch of salt
  • 1 star anise
  • 1 cinnamon stick
  • 5 cloves

Method
 

  1. Peel, core and roughly chop the apple. Finely slice the onion.
  2. Thinly slice or shred the cabbage.
  3. Put all ingredients in a large, heavy-based pot and gently simmer for about 60-80 minutes, until the cabbage is soft. Stir occasionally.
  4. Taste, add some honey if it’s not sweet enough.
