Figs with orange ricotta and honey
When the fig season starts in the late Summer you can still enjoy and sunshine whilst munching on this delicious fruit! I like baking/grilling them and serve them with Greek yoghurt and honey. This time I had some ricotta in my fridge, orange blossom honey in the cupboard so I created this quick recipe. These Figs with orange ricotta and honey were perfect for my weekend breakfast, but I would be happy serving the dish as a dessert too! During the festive season I’d add a few drops of Cointreau Liqueur too!

Method
- Cut the figs in half and brush them lightly with some honey. Put them under the grill for 2-5 minutes until they start to caramelise.
- Meanwhile, mix the leftover honey with the ricotta, orange zest and juice. Taste and adjust the sweetness to your liking.
- Put the figs on a serving plate, drop the ricotta mixture around them, then drizzle with more honey and scatter the mint leaves and pistachios on top.
- Serve at room temperature.
