Garlic grilled cherry tomatoes

These garlic grilled cherry tomatoes are super easy to make all year round and can be used for many meals and dishes. For example you can serve them with goat’s & blue cheese for a quick and easy lunch – or you can serve it as a side dish with grilled fish/meat, burgers and fishcakes. When cooled, you can add the tomatoes to salads and sandwiches. Or you can make a quick pasta sauce or dip from them. In the Summer grill them on the BBQ for a more intense, smoky flavour!

Ingredients
  

  • 2 packs of cherry tomatoes on vine
  • 2 Tbsp olive oil
  • 3 cloves of garlic minced
  • 4 sprigs of thyme
  • Salt and pepper

Method
 

  1. Put the tomatoes, still on the vine, in a roasting dish.
  2. Mix the oil with the garlic and thyme leaves, then drizzle this over the tomatoes. Season with sea salt and freshly ground black pepper.
  3. Place the dish under a medium grill, and cook for about 15 minutes, or until the tomatoes soften and start to burst.
  4. Serve warm as a side dish, or let it cool and serve with cheese, cold meats and salad.
