Gluten and dairy-free almond waffles

This gluten-free and dairy-free almond waffles are super easy to make. You can add as much sugar as you like to the batter, depending on the toppings you’re going to serve them with. I added a little coconut sugar as I don’t like them too sweet. Perfect for weekend breakfast or afternoon nibbles.

Ingredients
  

  • 1 cup self-raising gluten-free flour mixture
  • ½ cup ground almond
  • 2 large eggs
  • 1 cup almond milk
  • 1 tsp vanilla essence
  • Sugar to taste
  • Oil spray

Method
 

  1. Mix the ingredients well and let it rest for about 10 minutes.
  2. Heat your waffle maker. If the batter is too thick, add more milk (it should be pourable but thicker than normal pancake batter).
  3. Spray some oil over the hotplates then spoon some batter into the lower one, letting it spread out evenly. Close the maker and cook for 3-5 minutes (depending on your machine). When the waffle is golden, move it to a plate and repeat the cooking. You should be able to make about 4 waffles, depending on your maker.
  4. Serve warm with your chosen toppings.
