Green pea and dill waffle

Waffles can be savoury – in fact, you can make delicious treats, combining many different ingredients. You can use the waffles instead of bread (served with soups and stews) or as sandwich, party snack  base. This is ideal for those on special diets, such as yeast-free, dairy-free, gluten-free, egg-free, low-carb and so on, because for this recipe you can use gluten-free or chickpea flour, milk plant-based milk or flax eggs.  Just adjust the ingredients to your diet. Serve this yummy green pea and dill waffle with green pea spread or other paté or toppings of your liking.

Ingredients
  

  • 1 cup green pea defrosted
  • 1.5 cup flour gluten-free, if needed,
  • 1 tsp baking powder
  • ½ tsp bicarbonate of soda or salt
  • 2 cloves of garlic minced
  • 2 eggs or flax eggs
  • 1 handful dill leaves
  • 1 cup milk plant-based, if needed, approx..
  • 1 tsp oil

Method
 

  1. Put the eggs, peas , garlic and dill in a blender. Pulse for a few seconds or until you get a textured paste.
  2. Add the flour, baking powder and bicarb and half of the milk. Whiz again, adding more milk if needed, until you get a thick but pourable batter. Stir in the oil.
  3. Heat your waffle maker. Once it’s hot, add some batter and seal. Following the machine instructions, cook the waffles for about 3-5 minutes – they should be golden and crispy on the outside, soft inside. You should be able to get 3 or 4 waffles from the mixture (depending on the size of your machine).
  4. Serve warm or at room temperature.
