Healthy blueberry breakfast bar

This healthy blueberry breakfast bar  goes well with your morning tea or coffee, or munch on it during the day. It’s vegan, sugar-free, oil-free – yet high in fibre, protein and omega fats, so it keeps you full for longer. For a gluten-free version use appropriate oats.

Ingredients
  

  • 1 cup rolled oats
  • 1 large ripe banana
  • 1 Tbsp ground flax seeds
  • ½ cup chopped walnuts
  • ½ cup chopped dates figs and prunes
  • 1 tsp cinnamon powder Ceylon
  • ½ tsp ground ginger optional
  • 1 tsp vanilla extract
  • ½ cup soy oat or almond milk
  • ½ cup fresh blueberries

Method
 

  1. Put the banana in a mixing bowl and mash it with a fork.
  2. Add the remaining ingredients and combine well. If the mixture is too thick, add more milk.
  3. Transfer the mixture into a shallow baking tin, lined with parchment paper, or silicon mould.
  4. Bake in a preheated oven, set to 190C, for 20-25 minutes.
  5. Alternatively, put the tray in the air-fryer and set it to bake for approx. 15-20 minutes.
  6. Let it cool, then cut it into slices and serve.
