Honey-mustard roasted parsnip

This honey-mustard roasted parsnip is an easy  and delicious side dish that fit in a roast dinner or Sunday lunch menu. I used acacia honey because it’s not too sweet but you can use any other type of runny honey.

Ingredients
  

  • 2 large parsnips
  • 1 Tbsp grainy mustard
  • 1 tsp Dijon mustard
  • 1 Tbsp olive oil
  • 1 Tbsp Acacia honey

Method
 

  1. Preheat the oven to 180°C.
  2. Peel the parsnips then cut them into batons.
  3. Mix the oil and mustards together.
  4. Put the parsnips in a small roasting dish, then brush them with the mustard sauce.
  5. Bake for about 25 minutes, until tender.
  6. Drizzle with the honey and roast for another 5 minutes or so until the parsnip pieces are lightly caramelized and sticky.
  7. Serve warm.
