Maple and balsamic sweet potatoes

If you’re after a quick and easy vegetable side dish, try these maple and balsamic sweet potatoes. Sweet potatoes, red pepper, cherry tomatoes and red onion are gently cooked with oregano and chilli, then finished with balsamic vinegar and maple syrup for a delicious sweet-and-tangy glaze. They make a colourful accompaniment to pork, steak or chicken and would also be lovely as part of a Sunday roast. Alternatively, turn them into a light meal by adding crispy bacon, leftover roast chicken or crumbled feta cheese. The recipe is easy to adapt and works particularly well when you want something more interesting than the usual roasted potatoes.

Ingredients
  

  • 1 tbsp olive oil
  • 1 red onion thinly sliced
  • 2 garlic cloves thinly sliced
  • 2 medium sweet potatoes peeled and cut into bite-sized cubes
  • 1 red pepper sliced
  • 1 tsp dried oregano
  • ½ tsp chilli flakes optional
  • 1 handful cherry tomatoes halved
  • 1 tbsp balsamic vinegar
  • 2 tbsp maple syrup
  • Salt and freshly ground black pepper to taste
  • Fresh coriander or parsley to serve

Method
 

  1. Thinly slice the onion and garlic. Peel the sweet potatoes and cut them into bite-sized cubes. Slice the red pepper and halve the cherry tomatoes.
  2. Heat the olive oil in a large frying pan or sauté pan. Add the onion and garlic and cook for about 5 minutes until softened.
  3. Add the sweet potatoes and red pepper, followed by the oregano and chilli flakes, if using. Stir-fry for about 1 minute, then add the cherry tomatoes. Season with salt and freshly ground black pepper.
  4. Cover the pan and cook over medium-low heat for 8–10 minutes, stirring occasionally, until the vegetables are tender. Add a splash of water if they become too dry.
  5. Once the vegetables are cooked, add the balsamic vinegar and stir for 1–2 minutes, allowing it to reduce slightly and coat the vegetables.
  6. Add the maple syrup and stir for another minute or so, until the vegetables are lightly glazed and slightly sticky.
  7. Scatter with fresh coriander or parsley and serve warm.
