Maple mandarin cranberry sauce

This Maple Mandarin cranberry sauce is a bit boozy. It’s the ideal condiment in a Thanksgiving or Christmas menu. You can serve the leftover  with game, cold meats and cheese during the festive season.

Ingredients
  

  • 1 mandarin flesh only
  • 1 cup of cranberries
  • 1 cup of mandarin juice
  • 2 Tbsp maple syrup
  • 1 cinnamon stick
  • 2 Tbsp orange liqueur

Method
 

  1. Finely chop the mandarin.
  2. Add all ingredients to a saucepan, except the orange liqueur.
  3. Heat it gently over medium heat. Stir well, then bring to a simmer.
  4. Once the cranberries have softened (in about 10-15 minutes), turn up the heat to thicken (use a fork or spoon to mash the fruits a bit).
  5. When you get a sticky, almost jam-like sauce, turn off the heat and let it cool. Add the orange liqueur and remove the cinnamon.
  6. Transfer it to a jar for late ruse, or serve immediately with poultry, game, cold meats, cheese etc.
