Mexican style beef burger
I really don’t like plain beef patties in burgers. One of my favourite flavour is Mexican seasoning so I regularly make yummychipotle burgers. But this time I didn’t have any chipotle paste so I made up this spiced, Mexican-style beef burger using cupboard ingredients. I served it with grilled veggies (courgette & red bell pepper) and a quick tomato & chilli salsa in a gluten-free bun, but tortilla wrap, flatbread, taco would be just as suitable. If I had avocado, I would have made some guacamole for topping.

Method
- Put all ingredients in a large mixing bowl then combine. If you want your burgers to be really spicy, add cayenne, chilli flakes or finely chopped Jalapeno.
- Divide the mixture into 4 or 6 equal portions then shape patties between your palms. Put these on a plate, then chill until you’re ready to cook.
- Heat your BBQ/grill or griddle pan.
- Cook the burgers for 3-5 minutes on each side, depending on how well-cooked you like your beef.
- Meanwhile prepare your buns or flatbread and condiments of your choice.
- When the patties are ready, assemble the burgers and serve immediately.
