Miso braised red cabbage

When I make an Asian-style roast, I like to serve it with Asian-style braised or stir-fried vegetables. This miso braised red cabbage goes particularly well with roast duck or chicken! Any leftover can be served with a quick grilled beefsteak. If you want a sweet version, you can just add some maple syrup or honey to it.

Ingredients
  

  • 1 small red cabbage
  • 1 Tbsp miso paste
  • 1 cup of vegetable or dashi stock
  • 2 Tbsp rice vinegar
  • 1 Tbsp sesame oil
  • 1 Tbsp soy sauce
  • 2 Tbsp maple syrup optional
  • 1 Tbsp sesame seeds

Method
 

  1. Thinly shred the cabbage and put this into a heavy-based pan. Mix the stock with the miso paste until smooth, pour this over the cabbage.
  2. Add the vinegar, sesame oil, and soy sauce (and the maple syrup or honey if used).
  3. Put the lid on and gently cook for 30-45 minutes until tender.
  4. Finely slice the spring onions and stir in the cabbage. Put the lid on and cook for another minute.
  5. Serve with sesame seeds scattered on top.
