Mixed Berries Fool

If you’re after a  quick and easy, no-bake dessert this Mixed Berries Fool will tick all the boxes. You can make it with your favourite cookie, shortbread or biscuit – these can be gluten-free too (I used Amaretti bicuits). For special occasions I recommend adding a couple of spoonful of sweet liqueur (such asCreme De Framboise or Amaretto) to the fruits instead of the water. This dessert can be made up to 2 days ahead, so it’s perfect for dinner parties!

Ingredients
  

  • 2 small pack of vanilla sugar 10g each
  • 150 g frozen mixed berries
  • 227 ml double cream
  • ½ cup crushed shortbread or ginger biscuits can be gluten-ree
  • Extra berries to garnish

Method
 

  1. Put 1 sachet of sugar and frozen berries into a food processor and process until coarse or smooth, depending on your liking. Add a couple of spoonful of water (or liqueur), and whizz until you get a thick, mixture. Set aside.
  2. Pour the cream and the other sachet of vanilla sugar into a medium sized bowl and whisk or beat with an electric mixer until you get a thick but fluffy cream.
  3. Crush your chosen biscuits to breadcrumbs.
  4. Get 4-6 small glasses or bowls ready. Spoon a heaped Tbsp of the crumble into the bottom of each vessel, then spread some fruit purée over it, followed by some cream mixture. Repeat the layers once more.
  5. Finally add a few frozen berries to garnish and finish off with some biscuits sprinkled on top.
  6. Cover the pots and keep them in the fridge until you’re ready to serve.
